Tawa Kaleji

توا کلیجی

On the morning of Eid ul Adha, once the qurbani is done, the first thing many homes cook is the fresh kaleji. It goes straight onto a hot tawa or into a with tomatoes and green chilies, and is ready in about fifteen minutes. The two rules that keep liver soft are simple: cook it fast on high heat, and add the salt only at the end.

Method

Tap a step when it is done.

  1. Wash the liver cubes, peel away any thin outer membrane and cut out tough tubes. Drain them well in a colander.

  2. Heat the oil in a or on a deep over medium-high heat. Add the onion and fry for 3–4 minutes until soft and just turning golden.

  3. Turn the heat to high and add the liver. Spread it out and let it sear for a minute, then stir-fry for 2–3 minutes until no red shows on the outside and it has released some juice.

  4. Add the , chili powder, turmeric, coriander powder and cumin. Stir for 1 minute until the raw smell of the garlic is gone.

  5. Add the tomatoes and green chilies. Keep stirring on high heat for 5–6 minutes, pressing the tomatoes down, until they melt into a thick masala, the liquid has dried and the oil shines at the edges.

  6. Now add the salt, black pepper, garam masala and lemon juice. Stir for 1 minute more, then cut a piece open: it should be just cooked, with no pink left in the middle.

  7. Turn off the heat, scatter the ginger strips and coriander on top and serve hot with naan, roti or puri.

Kitchen notes

Salt at the start draws water out of the liver and makes it hard and grainy. Always add it once the liver is cooked.

Do not cover the pan or simmer the liver in water. Long, slow cooking is what turns kaleji rubbery.

Kaleji is at its best on the day of slaughter. Fresh liver is glossy and deep red-brown; dull, grey liver is old.

The Eid morning kaleji

On Eid ul Adha, the sacrifice is usually done in the morning, and the liver is the first part of the animal that reaches the kitchen. It is cooked straight away, often while the rest of the meat is still being cut and shared out, and eaten for a late breakfast with naan, roti or puris and a cup of chai. Many families also send a plate of it to neighbours. Outside Eid, tawa kaleji is a favourite at roadside dhabas, cooked to order on a large flat tawa with a raised edge.

Fast and hot, salt last

Liver is very lean and has almost no connective tissue, so unlike mutton it does not get more tender with long cooking. It gets tougher. The whole dish should take about fifteen minutes, on high heat, without a lid and without added water. Searing the liver before the tomatoes go in seals the outside and keeps the inside soft. Salt goes in at the very end, because salt pulls moisture from the liver and tightens it.

Variations

  • Kaleji with gurday: many homes cook the kidneys (gurday) along with the liver, cut to the same size.
  • Dry tawa style: skip the tomatoes, use only the dry spices and a squeeze of lemon, and keep tossing until the liver is just coated.
  • Masala kaleji: add a tablespoon of yogurt with the tomatoes for a slightly richer, saucier version.

Storing

Kaleji is best eaten the day it is cooked. Leftovers keep in the fridge for a day; reheat them quickly in a hot pan with a splash of water rather than in the microwave. Raw liver should be cooked within a day of slaughter, or frozen in small portions.

Questions people ask

Can I use chicken liver?

Yes. Chicken livers are softer and cook even faster: sear them for 2 minutes, and cook with the tomatoes for only 3–4 minutes. Beef liver works too but should be cut smaller.

Why is my kaleji hard?

Usually it was salted too early or cooked too long. Liver needs only about 10 minutes in total; once it is no longer pink inside, stop.

Should I soak liver in milk or vinegar first?

It is not necessary with fresh Eid kaleji. With older or beef liver, some cooks soak it in milk or water with a little vinegar for 30 minutes to soften the strong taste.
