Hyderabadi Chicken Dum Biryani (Kachchi Style)

حیدرآبادی چکن دم بریانی (کچی طرز)

Hyderabad in the Deccan is one of the world's great biryani cities, and its signature is *kachchi* (raw) biryani: the meat goes into the pot raw, in a rich marinade of yogurt, , mint and spices, and the rice goes on top three-quarters cooked. The pot is sealed and cooked on , so the meat cooks in its own steam and the rice soaks up everything rising from below. It's fragrant rather than fiery, and very different from the Pakistani chicken biryani, where a cooked masala is layered with rice.

Method

Tap a step when it is done.

  1. In the heavy pot you'll cook the biryani in, mix the chicken with the yogurt, ginger-garlic paste, chilli powder, turmeric, garam masala, green chillies, half the mint and coriander, half the birista, the lemon juice, salt and 2 tbsp ghee. Marinate for at least 2 hours, or overnight in the fridge.

  2. Bring the water to a rolling boil with the salt, bay leaves, cardamom, cloves, cinnamon and shahi zeera. Add the drained rice and boil for 5–6 minutes until 70–75% cooked: the grain should break easily but still have a firm core. Drain.

  3. Spread the rice over the raw chicken in an even layer. Scatter over the remaining birista, mint and coriander, drizzle with the saffron milk, kewra and remaining ghee.

  4. Seal the lid with dough (or foil and a tight lid). Cook on high heat for 5 minutes until you hear the steam, then on the lowest heat for 35–40 minutes, ideally on a tawa placed under the pot.

  5. Rest for 10 minutes off the heat, then open and gently mix from the side with a wide spoon so the layers of white, saffron and masala rice show. Serve with mirchi ka salan and raita.

Kitchen notes

Use a heavy-bottomed pot and keep the heat very low on dum. A tawa under the pot stops the chicken burning.

Getting the rice to exactly 70–75% is the key: underdone rice stays hard, overdone rice turns mushy.

For mutton kachchi biryani, use tender young mutton, marinate overnight with raw papaya paste and give it 60 minutes on dum.

The biryani of the Nizams

Hyderabad was ruled for two centuries by the Nizams, whose royal kitchens refined a Mughal style of cooking with Deccan ingredients. The result was the kachchi biryani, now so famous that “Hyderabadi biryani” is a dish name across India and the Gulf. It’s traditionally made with goat meat for weddings, but chicken is the everyday version.

Raw meat, part-cooked rice

The whole technique depends on timing. Raw marinated meat on the bottom, rice cooked to about three-quarters on top, and a sealed lid. Under , the marinade turns into a thick masala, the meat steams until tender, and the rice finishes cooking in the aromatic steam. Because nothing is pre-cooked, the flavours stay bright and distinct.

Hyderabadi vs Pakistani biryani

Pakistani and Karachi-style biryanis usually layer a fully cooked, tomato-rich masala with rice, often with potatoes and plums, and they’re spicier and tangier. Hyderabadi biryani is richer in yogurt, mint, birista and saffron, with no tomatoes and less chilli. Both are worth knowing; see our chicken biryani and Sindhi biryani.

Serving

Serve with mirchi ka salan, a cooling raita or onion-tomato salad, and finish with a cold drink like rose milk.

Questions people ask

What is the difference between kachchi and pakki biryani?

In kachchi biryani the meat is layered raw and cooks with the rice on dum. In pakki biryani, the meat is cooked into a masala first, then layered.

How do I know the chicken is cooked?

After 40 minutes on low dum, bone-in chicken pieces will be cooked through. If unsure, check one piece from the side; it should pull away from the bone.
