Patlıcan Musakka (Turkish Eggplant & Mince Bake)
پاتلیجان مُساقہ (ترکی بینگن اور قیمے کی ڈش)
Turkish musakka is a homely everyday bake, much simpler than the Greek dish of the same name: slices of eggplant fried until golden, layered with a savoury tomato, pepper and onion mince, and baked with a little water until everything melts together. There's no white sauce on top. Pakistani families who like baingan and keema will feel right at home, and it reheats beautifully for the next day.

Sprinkle the eggplant slices with salt, leave for 20 minutes, then pat dry. Fry in batches in a for 2–3 minutes per side until golden. Drain on a rack.
Pour off all but 2 tablespoons of oil. Cook the onions for 5 minutes, add the mince and garlic and fry on high heat for 8 minutes until browned and dry.
Add the peppers, chopped tomatoes, tomato paste, pul biber, pepper and salt. Cook for 8 minutes until thick.
In a baking dish, layer half the eggplant, then all the mince, then the rest of the eggplant. Top with tomato slices and pour the hot water around the edges.
Bake at 190°C for 30 minutes, until bubbling and most of the liquid is absorbed. Rest 10 minutes, then serve with rice and yogurt.
Serve hot with pilav and a bowl of yogurt.
Kitchen notes
To use less oil, brush the eggplant slices with oil and roast at 220°C for 20 minutes instead of frying.
No oven? Layer it in a wide pan, cover and cook on low heat for 25 minutes.
Potato slices can be layered in too, for a heartier version.
Not the Greek one
Many people know moussaka as a Greek dish with a thick white sauce on top. The Turkish musakka is a different, simpler home dish: eggplant and mince baked together, with no sauce at all beyond tomato. It’s one of the most common summer dinners in Turkey.
The layers
Golden eggplant. Salting draws out bitterness and water; frying until golden gives the slices flavour and a soft, rich texture.
Tomato mince. A dry, keema-like mince with onion, green pepper, tomatoes and .
A short bake. A cup of hot water poured around the dish lets everything simmer together in the oven, so the eggplant soaks up the meat juices.
Less oil
Fried eggplant soaks up a lot of oil. For a lighter dish, brush the salted, dried slices with oil and roast them on a tray at 220°C for about 20 minutes, turning once, until golden and soft. The taste is slightly less rich but still very good, and it saves standing over a frying pan in summer.
Serving
Serve with şehriyeli pilav, a bowl of yogurt and a çoban salatası. For a related dish, try karnıyarık, where whole eggplants are stuffed with mince.
