Rose Milk (Chennai-Style Chilled Rose Milk)
روز ملک (چنئی کا ٹھنڈا گلاب والا دودھ)
In Chennai's sweltering summers, rose milk is the drink of choice from roadside "cool drinks" stalls: ice-cold milk coloured pink with rose syrup, with a spoonful of soaked basil seeds (*sabja*) floating in it. It's simple, sweet, floral and very cooling. Pakistani readers will find it a close cousin of Rooh Afza doodh, made with a lighter, purely rose-flavoured syrup.

Method
Tap a step when it is done.
Soak the basil seeds in water for 15 minutes until they swell and turn jelly-like.
Stir the rose syrup (and sugar, if using) into the cold milk until evenly pink.
Put a spoon of basil seeds and some ice in each glass, pour in the rose milk and top with ice cream if you like.
Kitchen notes
Use a rose syrup without artificial flavours if you can; it tastes far more natural.
Gulkand (rose petal jam) stirred in makes a richer version.
Add a little vermicelli and ice cream to turn it into a quick falooda.
Chennai’s summer favourite
Chennai is hot for much of the year, and its “cool drinks” shops sell rose milk alongside badam milk and nannari sarbath. It’s especially popular with children and is a fixture at beaches, bus stands and college canteens. Some shops, like old ice cream parlours in Chennai, have been serving it for generations.
Basil seeds
The little black seeds (sabja in South India, tukh malanga in Pakistan) swell into tiny jelly-coated pearls when soaked. They add a fun texture and are believed to be cooling.
Simple and quick
There’s no cooking: cold milk, rose syrup and seeds. Use full-fat milk for the creamiest result, and chill everything well.
Make it a dessert
In Chennai, many shops offer “rose milk with ice cream”, topped with a scoop of vanilla, and some add a spoon of soft vermicelli to make it closer to falooda. At home, rose milk is also a gentle way to get children to drink milk in summer, and it can be made in a minute from a bottle of syrup kept in the fridge.
Serving
Serve ice-cold with Hyderabadi biryani, after a hot day, or as a treat. For a richer dessert drink, try falooda or jigarthanda.
Questions people ask
Can I use rose water instead of rose syrup?
Yes. Use 1 tsp rose water, 2 tbsp sugar and a drop of pink food colour (optional).
Is rose milk the same as Rooh Afza milk?
Similar. Rooh Afza is a herbal syrup with many flavours; rose milk uses a simple rose syrup.
