Bhel Puri (Mumbai Puffed Rice Chaat)

بھیل پوری (ممبئی کی مرمرا چاٹ)

Bhel puri is the taste of an evening on Mumbai's Chowpatty and Juhu beaches: a paper cone of crunchy (puffed rice) tossed in seconds with potato, onion, tomato and chutneys, topped with fine . It's sweet, sour, spicy and crunchy all at once, and must be eaten immediately before the puffed rice goes soft. If you love Pakistani chana chaat and papri chaat, this is their lighter, crunchier cousin.

Method

Tap a step when it is done.

  1. If the murmura isn't crisp, toast it in a dry pan on low heat for 3–4 minutes and cool.

  2. In a large bowl, mix the potato, onion, tomato, chillies, raw mango, both chutneys, chaat masala and salt.

  3. Just before serving, add the murmura, crushed papdi and peanuts and toss quickly so everything is coated.

  4. Squeeze over the lemon, top with sev and coriander, and eat straight away.

Kitchen notes

Bhel goes soggy within minutes. Prepare everything in advance but mix only when ready to eat.

For 'dry bhel', skip the chutneys and use lemon, chaat masala and chilli instead.

Puffed rice is sold as murmura, kurmura or mamra in South Asian shops.

A beach snack

Mumbai’s beaches come alive in the evenings with bhelwallas, vendors who mix bhel to order in a big steel bowl, shaking in chutneys and spices and handing it over in a paper cone with a flat papdi as a spoon. It’s light enough to eat before dinner and cheap enough to share, which is why it’s the city’s favourite evening snack.

Balance of flavours

Good bhel balances four things: sweet (tamarind chutney), sour (lemon, raw mango), spicy (green chilli, green chutney) and salty (chaat masala, sev). Taste and adjust before adding the puffed rice. Every vendor has a secret ratio.

Speed matters

The moment chutney touches puffed rice, the clock starts. Within five minutes, the crunch is gone. That’s why bhel is always mixed fresh, in front of you.

Serving

Serve in bowls or paper cones, with extra sev on top. For a heartier Mumbai snack, try sev puri or pav bhaji, and finish with a masala soda.
