Method

Tap a step when it is done.

  1. Mix the , salt and in a bowl. Rub in the oil with your fingertips for 2 minutes until the flour holds together when squeezed; this is the . Add water a little at a time and press into a stiff dough. Cover and rest for 20 minutes.

  2. Roll the dough out thin, about 2 mm, and cut out 5 cm rounds. Prick each one all over with a fork so it stays flat and does not puff. You should get 30–35 papri.

  3. Heat the oil in a over low-medium heat, to about 150°C, when a scrap of dough rises slowly. Fry the papri in batches for 5–6 minutes, turning, until they stop bubbling and turn crisp and pale golden. Drain and cool completely; they crisp up further as they cool.

  4. Whisk the yogurt with the sugar and salt until smooth and pourable. Keep it cold.

  5. Toss the chickpeas, potatoes and onion with half the and half the cumin.

  6. To assemble, arrange 7–8 papri on each plate, slightly overlapping. Spoon the chickpea mixture over them, pour over the yogurt, then drizzle with and green chutney.

  7. Finish with the remaining chaat masala and cumin, a pinch of chili powder, pomegranate seeds and coriander. Serve at once, while the papri are still crisp.

Kitchen notes

Do not skip the fork pricks. Unpricked papri puff up like puris and break under the toppings instead of staying flat and sturdy.

Fry on low heat until the bubbling stops. Pale papri that are pulled out early go chewy within hours.

Assemble each plate just before eating. Once the yogurt goes on, the papri start to soften within 10 minutes.

A chaat built in layers

Papri chaat is sold at chaat stalls in Lahore, Rawalpindi and Karachi, where it is built to order on a steel plate, and it is a regular at iftar and family gatherings. It shares its toppings with chana chaat and dahi bhallay, so many homes make all three from one pot of boiled chickpeas and one jar of chutney during Ramadan.

Flaky, flat papri

Papri use the same idea as samosa pastry: generous moyan rubbed into maida keeps the dough short, so it fries into crisp, flaky layers rather than a hard cracker. Pricking every round with a fork lets steam escape, which keeps them flat enough to carry toppings. They fry slowly on low heat until the bubbling around them almost stops, the sign that the water has cooked out; that is what keeps them crunchy for days.

Balancing the toppings

Each bite should have crunch, softness, cold creamy yogurt and the sharp chutneys. The yogurt is lightly sweetened to balance the sour tamarind and hot green chutney, and chaat masala goes on both the chickpeas and the top. Pomegranate seeds add a fresh pop. If you have it, a handful of sev or crushed boondi on top adds even more crunch.

Make-ahead

Fry the papri up to 2 weeks ahead and keep them airtight. The chickpeas, potatoes, yogurt and chutneys can all be prepared in the morning and kept in the fridge. Assemble plate by plate just before serving.

Questions people ask

Can I use store-bought papri?

Yes. Packaged papri from a nimko shop works well and saves most of the work; warm them for a few minutes in the oven if they have lost their crunch.

How long do homemade papri keep?

Fully cooled papri stay crisp for up to 2 weeks in an airtight jar, so it is worth making a double batch for Ramadan.

Can I bake the papri?

You can bake them at 180°C for 12–15 minutes, brushed with a little oil, until golden. They come out crisp but slightly harder and less flaky than fried ones.
