Banana Oat Muffins (Lunch-Box Friendly)
کیلے اور جئی کے مفنز (لنچ باکس کے لیے)
These banana oat muffins are the kind of bake you can feel good about putting in a lunch box: ripe bananas and a little honey do most of the sweetening, rolled oats and some atta add fibre, and yogurt keeps them moist for days. Everything is mixed in one bowl with a spoon, so children can help. Bake a dozen on the weekend and freeze half for later in the week.

Method
Tap a step when it is done.
Heat the oven to 180°C and line a 12-hole muffin tin with paper cases.
Mash the bananas well in a large bowl. Whisk in the eggs, yogurt, oil, sugar, honey and vanilla.
Add the oats, maida, atta, baking powder, baking soda, cinnamon and salt, and fold together gently until just combined. Stir in the chocolate chips or raisins. Don't over-mix.
Divide the batter between the cases (about three-quarters full) and sprinkle a few oats on top. Bake for 20–22 minutes until risen, golden and a toothpick comes out clean.
Cool in the tin for 5 minutes, then on a rack. Store in a box for 3 days or freeze for up to a month.
Kitchen notes
No muffin tin? Bake the batter in a greased loaf tin at 170°C for 45–50 minutes as banana oat bread.
Frozen muffins thaw in the lunch box by break time.
Many schools ban nuts; this recipe is nut-free unless you add them.
A better lunch-box bake
Shop cakes and muffins are often very sweet and made with refined flour. These muffins use ripe bananas and honey for most of the sweetness, and swap some of the flour for oats and . They’re still soft and cake-like, so children enjoy them, but they keep them full for longer.
One bowl, no mixer
There’s no creaming butter or beating eggs: just mash, stir and bake. The most important rule is not to over-mix once the flour goes in. Fold until you can’t see dry flour and stop; over-mixed batter makes tough, tunnelled muffins.
Baking without an oven
Many Pakistani homes bake in a pot (patila) on the stove. Preheat a large covered pot with a stand or a layer of salt in the bottom for 10 minutes, put the muffin cases in small steel cups on the stand, and bake covered over low-medium heat.
Serving
Serve with a glass of milk for breakfast, or pack one in the lunch box with fruit. For more bakes, see the bakery section; for breakfast ideas, see our kids’ breakfast collection.

Yes. Put the cases in small steel cups on a stand inside a large covered pot preheated for 10 minutes, and bake on low-medium heat for 25–30 minutes.
Can I skip the sugar completely?
You can use 4 bananas and no sugar. The muffins will be less sweet and a little denser, but still good.
