Milk Barfi (Quick Milk Powder Barfi)
دودھ کی برفی (ملک پاؤڈر سے جلدی والی)
Barfi takes its name from *barf*, snow, after the pale white squares sold in sweet shops. Traditionally it's made by cooking khoya (reduced milk solids) with sugar, which takes hours. This quick version uses milk powder, which gives the same rich, smooth, fudgy result in about 15 minutes. Flavour it with cardamom, top with pistachios and silver leaf if you like, and you have a box of mithai ready for Eid or guests.

Method
Tap a step when it is done.
Melt the butter in a non-stick pan over low heat. Add the milk and sugar and stir until the sugar dissolves.
Add the milk powder and stir constantly for 8–10 minutes. It will turn into a soft dough that leaves the sides of the pan and gathers into a ball. Stir in the cardamom.
Press into a greased tray or plate about 2 cm thick, smooth the top and sprinkle with pistachios, pressing them in.
Cool for 1 hour until set, then cut into squares or diamonds.
Kitchen notes
Keep the heat low. Milk powder scorches easily and turns brown and bitter.
Stop when the mixture just forms a ball; overcooked barfi becomes dry and crumbly.
Variations: add 2 tbsp cocoa for chocolate barfi, or ½ cup desiccated coconut for coconut barfi.
The everyday mithai
Barfi is the backbone of a Pakistani mithai box, in plain, pistachio, coconut, chocolate and dozens of other flavours. Sweet shops make it from khoya cooked down from gallons of milk. At home, milk powder is a reliable shortcut that has become very popular in South Asian kitchens and among cooks abroad who can’t easily find khoya.
The technique
The method is a single pan and constant stirring. Butter, milk and sugar make a light syrup; milk powder thickens it into a smooth dough. The moment it leaves the sides and gathers into a ball, it’s done.
Make it your own
Plain cardamom barfi is the classic, but it takes flavours easily: cocoa, coconut, a little rose water, or saffron soaked in warm milk. Silver leaf (warq) is traditional for special occasions.
Serving
Serve in small squares with tea, pack it into gift boxes for Eid, or set out with kalakand and besan ladoo on a mithai platter.
