Desi Omelette
دیسی آملیٹ
The desi omelette is the first thing many Pakistanis learn to cook. It's flat and thin rather than folded, full of onion, tomato, green chili and coriander, and seasoned with salt, red chili and a pinch of turmeric for colour. It cooks on a or frying pan in a few minutes and is eaten with paratha, roti or bread, and chai, for breakfast, a quick dinner or a hostel-room meal.

Method
Tap a step when it is done.
Crack the eggs into a bowl and beat with a fork for 30 seconds, until the yolks and whites are completely mixed and slightly frothy.
Stir in the onion, tomato, green chili, coriander, salt, crushed chilies and turmeric.
Heat the ghee on a or frying pan over medium heat. Pour in the egg mixture and spread it into a thin, even round with the back of a spoon.
Cook for 2–3 minutes until the bottom is golden and the top is almost set. Flip with a wide spatula and cook the other side for 1 minute.
Slide onto a plate, scatter over a little more coriander and serve at once with paratha and chai.
Kitchen notes
Seed the tomato. The seeds and juice make the omelette watery and stop it browning.
Medium heat gives golden edges and a soft centre. On high heat, the onions stay raw while the egg burns.
For a fluffier omelette, add a tablespoon of milk to the eggs.
The everyday omelette
In Pakistani homes, an omelette is rarely plain. It’s thin and flat, the size of the pan, packed with onion, tomato and green chili, and coloured a little yellow with turmeric. It’s breakfast with a paratha on weekdays, a five-minute dinner when there’s nothing else in the fridge, and the first dish many students cook for themselves.
Small things that matter
- Beat well. Whisk until the whites and yolks are fully combined, so the omelette is evenly coloured and tender.
- Chop small. Finely chopped onion cooks through in the few minutes the omelette takes; big pieces stay raw and crunchy.
- Seed the tomato. Tomato juice makes the egg watery.
- Use ghee or butter for the best flavour and golden edges.
Ways to vary it
- Cheese omelette: scatter grated cheese over the top before flipping.
- Masala omelette: add a pinch of cumin and chaat masala.
- Bread omelette: lay a slice of bread on the uncooked top, flip, and fold the omelette around it. This is a favourite at Karachi’s breakfast stalls.
Serving
Serve with paratha, roti or toast, ketchup and a cup of chai.
Questions people ask
Why does my omelette break when I flip it?
It wasn't set enough, or the pan was too small for the amount of egg. Wait until the top is nearly dry, and use a wide spatula. Or cut it in half and flip each half.
How is it different from khageena?
[Khageena](/pakistani/khageena/) is scrambled: the onions and tomatoes are cooked first and the eggs stirred into them. The omelette is mixed raw and cooked as a flat round.
Can I make it without onion?
Yes. Add a little extra coriander and green chili for flavour.
