Kachumber Salad

کچومر سلاد

Kachumber is the simple chopped salad that comes to the table with nearly every Pakistani rice dish, karahi and BBQ platter. Onion, tomato and cucumber are diced small and even, then dressed at the last minute with lemon juice, green chili and a sprinkle of . Rinsing the onion and keeping the tomato seeds out are what keep it crisp and fresh instead of sharp and watery.

Method

Tap a step when it is done.

  1. Dice the onion into small, even cubes about 5 mm across. Soak in cold water for 10 minutes to take away its harsh bite, then drain and pat dry.

  2. Cut the tomatoes in quarters, scoop out the seeds and watery centre, and dice the flesh to the same size as the onion.

  3. Dice the cucumber the same size, and finely chop the green chilies, coriander and mint. Put everything in a bowl and chill until you are ready to eat.

  4. Just before serving, squeeze over the lemon juice, sprinkle on the chaat masala, cumin, salt and black pepper, and toss gently.

  5. Serve straight away with biryani, pulao, karahi, kababs or BBQ.

Kitchen notes

Salt draws water out of the vegetables within minutes. Dress the salad only when you are about to eat it.

Firm, slightly underripe tomatoes dice cleanly and hold their shape. Very ripe tomatoes turn to mush.

Take time to cut everything the same small size. That is what makes it kachumber rather than a rough salad.

The salad on every dastarkhwan

In Pakistan, salad usually means something very simple: raw onion, tomato and cucumber with lemon. Kachumber is the finely diced, dressed version of that, and it is the standard partner for biryani, pulao, karahi, nihari and BBQ. Its job is to add crunch, freshness and acidity next to rich, slow-cooked food, so each bite of meat or rice can be followed by something cool and sharp.

Knife work and timing

There is no cooking here, so the two things that matter are how you cut and when you dress. Dicing everything to the same small size means each spoonful has a little of every vegetable. Soaking diced onion in cold water for ten minutes washes away the sulphurous sting that can overpower the salad, while leaving its crunch. Removing the tomato seeds keeps the bowl from filling with liquid.

Salt and lemon start pulling water out of cucumber and tomato almost immediately. Keep the chopped vegetables cold and undressed until the meal is ready, then toss with the lemon, salt, cumin and at the table. Ten minutes later the salad is already softer; half an hour later it is soup.

Variations

  • Anar kachumber: add pomegranate seeds for sweet bursts and colour, popular at weddings and dawats.
  • Mooli kachumber: add diced white radish in winter, when it is crisp and in season.
  • Yogurt kachumber: fold the undressed vegetables into whisked yogurt for a chunky raita.

Serving

Serve kachumber in a small bowl next to the main dish, with lemon wedges on the side for anyone who likes extra tang. Leftovers will be watery, so it is best to make just what you need.

Questions people ask

Can I make kachumber ahead of time?

You can chop the vegetables up to 3–4 hours ahead and keep them covered in the fridge, ideally with the onion separate. Add the lemon, salt and masala only at the last minute.

What is the difference between kachumber and regular salad?

Kachumber is always finely diced and dressed with lemon and spices, so it works almost like a fresh relish to eat with each bite of rice or meat. A regular Pakistani salad plate is usually sliced rings of onion, tomato and cucumber with lemon on the side.

Can I add other vegetables?

Yes. Diced radish, carrot, capsicum or a handful of pomegranate seeds all work well, as long as they are cut to the same small size.
