Aloo Tahari

آلو کی تہری

Tahari is the vegetarian rice dish of Urdu-speaking homes in Karachi and Hyderabad, brought over from the kitchens of Uttar Pradesh and Hyderabad Deccan. It looks like a biryani, golden-yellow and full of spices, but the rice is cooked from raw in the masala itself, so it is quicker and far simpler. Potatoes soak up the masala, and green chilies, mint and a squeeze of lemon keep it bright. It is a much-loved weeknight dinner with raita and achar.

Method

Tap a step when it is done.

  1. Heat the oil in a heavy and fry the onion over medium heat for 8–10 minutes, stirring often, until golden.

  2. Add the cumin, cloves, peppercorns, cardamom, cinnamon and bay leaves and sizzle for 30 seconds, then stir in the for a minute.

  3. Add the tomatoes, yogurt, chili powder, turmeric, coriander powder and salt. Do the for 6–8 minutes, stirring, until the tomatoes have melted and the oil separates.

  4. Add the potatoes and fry them in the masala for 3–4 minutes until well coated.

  5. Pour in the water, cover and simmer for 5 minutes so the potatoes get a head start. Then turn the heat to high and taste: the liquid should be well salted and spicy.

  6. Add the drained rice, green chilies and mint. Stir once gently and boil uncovered on high heat for 7–8 minutes, until the liquid sinks below the rice and steam holes form.

  7. Sprinkle the lemon juice and half the coriander over the top. Seal the pot and cook on over the lowest heat for 12–15 minutes, until the rice and potatoes are tender.

  8. Rest for 5 minutes, fluff gently, scatter over the remaining coriander and serve with raita and achar.

Kitchen notes

The liquid includes the moisture from the tomatoes and yogurt, so 3 cups of water for 2 cups of rice is enough. More will make the tahari soft and wet.

Cut the potatoes into large chunks, roughly the size of a walnut or bigger, so they cook through in the same time as the rice without falling apart.

A Karachi weeknight classic

Tahari arrived in Karachi and Hyderabad with families who migrated from Uttar Pradesh and the Deccan in 1947, and it remains a staple in Urdu-speaking homes. It is cheap, filling and ready in under an hour, which makes it a regular weeknight dinner, especially when there is no meat in the house. It is also cooked in large pots for gatherings and niyaz. Raita, a spoon of mango or mixed achar and sometimes papad are the classic sides.

The technique: rice cooked in the masala

Tahari uses the absorption method. First the masala is cooked like a curry base: golden onions, whole spices, then tomatoes and yogurt with turmeric and chili until the oil separates. The potatoes are fried in it, then simmered briefly in measured water so they are half-cooked by the time the rice goes in. The soaked rice then boils in the spiced liquid until it drops below the surface, and a sealed finishes both rice and potatoes together.

Turmeric gives tahari its yellow colour, and the green chilies, mint and lemon added near the end keep it fresh-tasting instead of heavy.

Variations

  • Gosht ki tahari: add mutton or beef cooked tender in the masala.
  • Matar tahari: add a cup of peas along with the rice.
  • Extra aroma: a few drops of kewra or a pinch of garam masala before dum.

Storing and reheating

Tahari keeps for 2 days in the fridge. Sprinkle with water and reheat covered on low heat, or in the microwave under a damp paper towel.

Questions people ask

What is the difference between tahari and biryani?

In tahari the raw rice cooks directly in the spiced masala and absorbs it, so the whole pot is one even colour. In biryani the rice is boiled separately and layered over the masala.

Can I add meat to tahari?

Yes. Mutton or beef tahari is common in Karachi. Cook the meat in the masala until tender before adding the potatoes, then measure the remaining liquid and top it up to 3 cups.

Why did my tahari turn mushy?

Too much water, potatoes cut too small, or stirring after the rice went in. Stick to 1½ cups of liquid per cup of soaked rice, keep the potatoes large and leave the pot alone once the rice is added.
