Homemade Chicken Nuggets (Freezer-Friendly)

گھر کے چکن نگٹس (فریز کرنے کے قابل)

Nuggets are the first fast food most children fall in love with. Homemade ones are made from whole pieces of chicken breast you can see, lightly seasoned, with a crisp crumb that doesn't need deep frying. Make a big batch on the weekend and freeze them raw: on a busy evening they go straight from the freezer into the oven or air fryer. Cut the chicken smaller and spice it up, and the same recipe becomes popcorn chicken.

Method

Tap a step when it is done.

  1. Season the chicken pieces with the salt, pepper, garlic and lemon juice. Leave for 15 minutes. For smoother, shop-style nuggets, pulse the seasoned chicken in a chopper to a coarse paste and shape into flat ovals with wet hands.

  2. Set out three plates: flour, the beaten egg, and breadcrumbs mixed with paprika. Roll each piece in flour, dip it in egg, then press it into the crumbs so it's evenly covered.

  3. To freeze: lay the coated nuggets on a tray without touching, freeze for 2 hours, then pack into bags. They keep for 2 months.

  4. To fry: heat 2 cm of oil in a to 170°C and fry the nuggets in batches for 4–5 minutes, turning, until golden and cooked through. Drain on a rack.

  5. To bake or air-fry: spray the nuggets well with oil and bake at 220°C for 15–18 minutes, turning halfway, or air-fry at 200°C for 10–12 minutes. From frozen, add 5 minutes.

  6. Serve hot with ketchup, garlic mayo or a honey-mustard dip, with fries or vegetable sticks.

Kitchen notes

Crushed cornflakes give the crunchiest coating, almost like shop nuggets. Put them in a bag and crush with a rolling pin.

Popcorn chicken: cut the chicken into 1.5 cm pieces, add ½ tsp chili powder and ½ tsp chili flakes to the seasoning, and fry for 3 minutes.

For lunch boxes, pack cooled nuggets with a small pot of ketchup; they taste good at room temperature by lunchtime.

Better than the box

Frozen nuggets from the shop are convenient, but many are made from minced chicken with fillers, starch and a lot of salt. Homemade nuggets use whole chicken breast and simple seasoning, so you know exactly what your children are eating. They take about half an hour to make in a batch, and freeze beautifully.

Choosing your coating

Plain breadcrumbs give a classic golden nugget. Crushed cornflakes make an extra-crunchy shell that stays crisp even when baked. Panko (Japanese breadcrumbs) is light and very crunchy. For a gluten-free version, use crushed rice crispies or cornflakes and cornflour instead of plain flour.

Fry, bake or air-fry

Shallow frying gives the most even colour. Baking or air-frying uses a fraction of the oil and suits a weeknight; spray the nuggets well with oil so the crumbs turn golden rather than dry. From the freezer, there’s no need to thaw.

Serving ideas

Serve with garlic mayo or ketchup, coleslaw and fries for a fast-food night, or tuck a few into a lunch box. See our school lunch box collection for more ideas that travel well.

Questions people ask

How do I know they're cooked inside?

Cut the biggest one open: the meat should be white all the way through with no pink, and the juices clear. A thermometer should read 75°C.

Can I make them egg-free?

Yes. Instead of egg, dip the floured chicken in thick yogurt thinned with a spoon of milk, then into the crumbs.
