Zinger Burger (Crispy Spicy Chicken Burger)
زنگر برگر (کرسپی مصالحے دار چکن برگر)
The zinger is Pakistan's favourite fast-food burger: a whole chicken fillet with a fiery, crunchy coating, a cold crisp lettuce leaf and a slick of creamy sauce in a soft bun. Shops keep their spice mixes secret, but the method is simple once you know the two tricks: a spicy that seasons the chicken right through, and a wet-dry that builds those craggy flakes. Made at home it costs a fraction of the shop price; check the cost panel below with your own prices.

Flatten the chicken fillets a little with the back of a pan so they are an even 1 cm thick. Mix the water, brine salt, chili powder, chili flakes, black pepper, garlic paste and vinegar in a bowl, add the chicken, cover and refrigerate for at least 2 hours, or up to overnight.
In a wide plate, mix the flour, cornflour, paprika, garlic powder, baking powder and coating salt. Sprinkle 2 tablespoons of the egg-water over the flour and rub it in with your fingers to make little lumps; these become the crunchy flakes.
Lift each fillet out of the brine, press it into the flour, dip it in the egg-water, then press it firmly into the flour again, turning and pressing so the coating sticks in ragged layers. Rest the coated fillets on a rack for 10 minutes so the coating sets.
Heat the oil in a to 170°C (a pinch of flour should sizzle at once but not burn). Fry 2 fillets at a time for 6–7 minutes, turning once, until deep golden and cooked through (75°C in the thickest part, or no pink when cut). Drain on a rack, not paper, so the bottom stays crisp.
Mix the mayonnaise, ketchup and chili sauce for the zinger sauce. Toast the cut sides of the buns on a dry pan for a minute.
Spread sauce on both halves of each bun. Layer the bottom with lettuce, a hot fillet and a cheese slice if you like, then the top bun. Serve straight away with fries and coleslaw.
Kitchen notes
Fry in small batches. Too many fillets at once drop the oil temperature and the coating turns greasy instead of crisp.
Air fryer: spray the coated fillets well with oil and cook at 200°C for 14–16 minutes, turning halfway. The crust is lighter but still crunchy.
Freeze coated, unfried fillets on a tray, then bag them. Fry from frozen at 160°C for 9–10 minutes for a fast-food night without the mess.
Pakistan’s favourite burger
Fried chicken chains arrived in Pakistan in the 1990s, and their spicy fillet burger quickly became the most ordered item on the menu. Within a few years every local burger shop, food street and school canteen had its own “zinger”. Today it is the default order for birthday parties, cricket nights and office lunches from Karachi to Peshawar, and many families now make it at home to control the quality of the chicken and oil.
The two tricks: brine and a rough coating
A shop zinger is juicy inside because the chicken is soaked in a salty, spicy before frying. The salt seasons the meat right through and helps it hold its juices in the hot oil, so even breast meat stays tender. Two hours is enough; overnight is better.
The famous craggy crunch comes from the : flour, then egg-water, then flour again, pressed on firmly. Rubbing a little liquid into the flour first makes small lumps that fry into extra-crisp flakes. Cornflour keeps the coating light, and a little baking powder makes it puff.
Getting the frying right
Keep the oil around 170°C. Hotter, and the outside browns before the inside cooks; cooler, and the coating soaks up oil. Fry two pieces at a time and drain them on a rack so steam can escape. A kitchen thermometer is a cheap, useful tool for all frying.
Home versus takeaway
Made at home, four zingers use about half a kilo of chicken, a pack of buns and store-cupboard spices. Use the cost panel on this page with your local prices to compare with your favourite shop. Serve with loaded fries or simple masala fries, coleslaw and garlic mayo. For the same chicken without the bun, see crispy fried chicken.
Questions people ask
Why does my coating fall off?
Usually the fillet was too wet or was moved too soon. Let excess brine drip off, press the flour on firmly, rest the coated chicken for 10 minutes, and don't turn it in the oil for the first 2 minutes.
Can I make it less spicy for children?
Yes. Leave out the chili flakes and half the chili powder from the brine, and use plain mayonnaise instead of zinger sauce.
Thigh or breast?
Boneless thigh is juicier and more forgiving; breast gives the classic shop shape. If you use breast, slice it thin and don't skip the brine.
