Fruit and Yogurt Parfait (Breakfast Cups)

فروٹ یوگرٹ پارفے (ناشتے کے کپ)

A parfait is just yogurt, fruit and something crunchy layered in a glass, but children treat it like dessert. Thick yogurt gives protein and calcium, seasonal fruit adds vitamins and natural sweetness, and a quick homemade granola adds crunch without the sugar of shop cereals. Let children build their own cups from bowls of toppings: they're far more likely to eat what they've made.

Method

Tap a step when it is done.

  1. Granola: heat the oven to 170°C. Mix the oats, honey, oil, almonds and cinnamon and spread thinly on a lined tray. Bake for 12–15 minutes, stirring once, until golden. It crisps as it cools. (Or toast in a dry pan over low heat for 6–8 minutes, stirring.)

  2. Stir the vanilla or cardamom into the yogurt.

  3. In glasses or small jars, layer a spoon of yogurt, some fruit and a sprinkle of granola, and repeat. Finish with fruit and granola on top. Eat straight away, or keep the granola separate until serving so it stays crunchy.

Kitchen notes

Granola keeps for 2 weeks in an airtight jar. Make a big batch.

For children under 5, use ground nuts or seeds rather than chopped nuts, and leave out whole nuts.

Thick yogurt makes neat layers. Hang ordinary yogurt in a muslin cloth for an hour to thicken it.

Dessert for breakfast (almost)

Layering yogurt and fruit in a glass makes an ordinary breakfast look special, and children love the colours. Parfaits are also one of the fastest breakfasts there is: with granola made ahead, each cup takes a minute to put together.

Homemade granola

Shop-bought granola and breakfast cereals often contain a lot of sugar. Homemade granola is just oats, a little honey and oil, and a pinch of cinnamon, toasted until golden. It’s cheaper, less sweet and keeps for two weeks. Add nuts or seeds for older children.

Seasonal fruit

Use whatever is in season and good value: mango and banana in summer; guava, orange (kinnow), apple and pomegranate in winter; strawberries in early spring. Chop fruit small for little children.

Questions people ask

Can I use flavoured yogurt?

You can, but flavoured yogurts often contain a lot of sugar. Plain yogurt with fruit and a little honey is better for everyday breakfasts.

Can it go in a lunch box?

Yes, in a sealed jar with an ice pack, with the granola in a separate small bag to sprinkle on at lunchtime.
