Loaded Fries (Crispy Fries with Chicken, Cheese Sauce and Jalapeños)
لوڈڈ فرائز (چکن، چیز ساس اور ہالاپینو والے کرسپی فرائز)
Loaded fries are a meal disguised as a side: a pile of crisp chips smothered in molten cheese sauce, spicy chicken and sauces, eaten with a fork straight from the box. They're only as good as the fries underneath, so this recipe starts with the method that makes chips crisp outside and fluffy inside: soak, , salt. The cheese sauce is a quick with cheese melted in, so it stays smooth and doesn't set like plastic.

Method
Tap a step when it is done.
Soak the potato sticks in cold water for at least 30 minutes to wash off surface starch. Drain and dry them very well on a cloth; wet potatoes spit and won't crisp.
First fry: heat the oil in a to 150°C and fry the potatoes in batches for 5–6 minutes until soft but still pale. Lift out and rest on a rack for at least 10 minutes (or freeze them at this stage).
Meanwhile, toss the chicken with the chili powder, paprika, garlic and salt and stir-fry in a spoon of oil for 6–7 minutes until cooked and slightly charred. Keep warm.
Cheese sauce: melt the butter in a , stir in the flour and cook for 1 minute. Whisk in the milk gradually and simmer for 3 minutes until thick. Take off the heat and stir in the cheese until smooth. Add a pinch of salt and chili.
Second fry: heat the oil to 185°C and fry the fries again for 2–3 minutes until golden and crisp. Drain, and toss with salt while hot.
Pile the fries on a platter or in boxes. Pour over the hot cheese sauce, scatter the chicken and jalapeños, drizzle with garlic mayo and chili sauce, and finish with spring onion. Serve at once.
Kitchen notes
Shortcut: use frozen fries, baked or air-fried until extra crisp. They are already par-fried.
Use older, floury potatoes (not new or waxy ones) for fluffy insides. Large, mature potatoes from the market work best.
Variations: Nashville loaded fries (brush the chicken with Nashville hot oil), beef chili fries, or tikka fries with leftover chicken tikka.
The side dish that became a meal
Loaded fries came to Pakistan through American-style burger joints and quickly became a food-street favourite, often shared by a group straight from the box. Every shop has its version: cheese and jalapeños, chicken and garlic mayo, or this generation’s favourite, Nashville loaded fries.
Perfect fries, every time
Restaurant chips are crisp because they’re fried twice. Soaking cut potatoes in water removes surface starch so they don’t stick or brown too fast. The first fry at a low temperature cooks them through until soft. After a rest, a short second fry in very hot oil makes a crisp golden crust. Dry the potatoes well before each fry, and fry in small batches so the oil stays hot. Par-fried fries also freeze well, so you can fry a big batch once and finish them in minutes later.
A cheese sauce that stays smooth
Melted cheese alone on fries turns stringy and then hard. Cheese melted into a quick stays pourable and creamy, like the sauce in shops. Cheddar gives the best flavour; processed cheese slices make it extra smooth. Never let it boil once the cheese is in.
Serving
Serve as a sharing platter with hot wings or alongside a zinger burger. Drizzle with garlic mayo or comeback sauce. For a simpler desi side, see masala fries.
Questions people ask
Why do my fries go soft?
They weren't dried before frying, the oil was too cool, or they were fried in one go. Double frying at two temperatures gives a crust that stays crisp much longer.
My cheese sauce went grainy. What happened?
It boiled after the cheese went in. Always take the white sauce off the heat before adding cheese, and stir gently until it melts.
