Hot Wings (Crispy Spicy Chicken Wings)

ہاٹ ونگز (کرسپی مصالحے دار چکن ونگز)

Chicken wings are one of the cheapest cuts at the butcher and one of the most loved party foods. The trick to crisp wings without a deep fryer is to dry them well, toss them with a little baking powder and salt, and roast them hot; the skin turns crackly as it renders. Then they're tossed in a glossy sauce of butter, chili sauce and garlic. Fried wings are crisper still, and the sauce works either way.

Method

Tap a step when it is done.

  1. Pat the wings very dry with kitchen paper. If you have time, leave them uncovered in the fridge for a few hours or overnight; dry skin crisps best.

  2. Toss the wings with the baking powder, salt, chili powder, garlic powder and pepper until evenly coated.

  3. Spread the wings on a rack set over a lined tray. Bake at 220°C for 40–45 minutes, turning once, until deep golden and crackly. (To fry instead: fry at 170°C for 10 minutes, then at 190°C for 2 minutes.)

  4. Meanwhile, melt the butter in a or wide pan over low heat. Add the garlic and cook for 1 minute without browning, then stir in the chili sauce, ketchup, honey, vinegar and chili flakes and simmer for 2 minutes until glossy.

  5. Tip the hot wings into the sauce and toss until coated. Sprinkle with sesame seeds and spring onion and serve at once with garlic mayo or a yogurt dip.

Kitchen notes

Use baking powder, not baking soda. Soda gives a soapy, metallic taste; baking powder simply helps the skin dry and blister.

Honey-BBQ wings for children: skip the chili sauce and flakes, and toss the wings in 4 tbsp BBQ sauce, 1 tbsp honey and 1 tbsp butter.

Toss in the sauce just before serving. Sauced wings soften within 20 minutes.

A cheap cut that tastes expensive

Wings cost less than almost any other part of the chicken, yet in restaurants they’re sold by the piece at a high price. At home, a kilo feeds four as a meal or a whole party as a snack. They’re messy, fun and perfect for a cricket match on TV.

The crisp-skin method

Wing skin is full of fat and water. Patting it dry and leaving it uncovered in the fridge removes surface moisture. Baking powder raises the pH of the skin slightly, which helps it brown and blister into tiny crunchy bubbles. A rack under the wings lets hot air circulate so the bottoms don’t stew in their own fat. The result is close to fried, with far less oil and no splattering.

The sauce

The classic American buffalo sauce is just butter and vinegary hot sauce. This version adds garlic, a little ketchup and honey for the sweet-spicy taste Pakistani diners like, similar to the sauce on chilli chicken. Make it as hot as you like with chili flakes.

Serving

Serve with garlic mayo or a mint yogurt dip, coleslaw, loaded fries and cold drinks. For a party table, add chicken nuggets and a pizza.

Questions people ask

Do I need to boil the wings first?

No. Drying them and baking on a rack at high heat renders the fat and crisps the skin without boiling.

How many wings per person?

As a snack, 4–5 pieces; as a main meal with fries, 8–10 pieces (about 250 g).
